THESE! These extra sweet potato bites are so good. Thanksgiving is already next Thursday and my newsfeed is flooded Turkey Day treats. When I saw these from Delish I had to try them!
Having made a lot of sweet potato recipes I was skeptical of how they would turn out. To my surprise the sweet potato slices weren’t mushy or soggy at all (my sweet potato fries usually struggle).
So they were a huge and easy success. My daughter got a bitter pecan though and suggested I inform you that only some of the nuts were good.

Ingredients

3-4 medium sweet potatoes, peeled
2 tbsp. melted butter
1 tsp maple syrup
kosher salt
marshmallows
pecan halves

Directions

1. Preheat over to 400 degrees F
2. Slice sweet potatoes into 1/4″ coins. Toss with melted butter and maple syrup and place in an even layer on a baking sheet. Sprinkle each slice with salt. Bake for 20 minutes, or until tender, flipping sweet potato halfway through. Remove baking sheet and turn on broiler.
3. Top each cooked sweet potato slice with a marshmallow. Place under broiler until the marshmallow is puffed and golden. Immediately remove from over and top each marshmallow with a pecan half.
